INGREDIENTS (serves 8)
350g dark chocolate
5 eggs
70g brown sugar
100g white sugar (or 170g white sugar brown sugar if not)
200g butter
100g flour
150g shelled walnuts crushed
RECIPE
Over low heat in a double boiler melt the chocolate cut in small pieces. Stir with a wooden spoon until completely melted. Add the butter out of the fire and stir for a fluid mixture smooth and shiny.
Transfer mixture to a bowl, add the brown sugar and white sugar and mix. Then put the eggs one at a time mixing after each addition.
Sift the flour to aerate it and add in small amounts, stirring each time. Add crushed nuts.
Prepare the mold by covering with butter and flour and put in the mixture. Bake at 180 degrees for 15 to 20 minutes. the knife should come out dry but inside the brownie should be soft. Cut into rectangles and serve warm or cold. the brownies will keep in refrigerator for 2 to 3 days in an airtight container.
